A Food That Everyone Loves
There are only a handful of foods that are loved by all. And by all, I mean, the whole world, such as pizza, sushi, kebab, and noodles.You can find pizza in every city in the states, to Manila, Greece, and even Mexico. Of course, every country has their own variations, with different ingredients. But, I'm not talking about pizza here!!! (And, in all honesty, I'm not even sure why I stumbled upon the subject!)
Tacos!!!! I'm referring to tacos on this post. I have never heard of anyone not liking any kind of juicy, spicy filling wrapped in a warm tortilla, and more than likely, topped with some succulent veggies and a squirt of zesty lime. My love for tacos has not dissolved, since I became vegan. Only because it is such a versatile dish (..or, should I say hand-held comestible.)
I have switched over from crispy fish tacos to veg-only tacos, and, man, is the switch ever so deliciously amazing! I have made everything from simple avocado and spinach tacos, to more complex portobello fajitas, with a chipotle cream, and onion and cucumber pickle. What I have pictured is the latter. I sautéed some sweet red and yellow peppers with onion, garlic, thick sliced portobellos, kale, and cilantro. I added just a dash of cumin, to give it that more authentic Mexican flavor. Prior to cooking, I sliced some Persian cucumbers, with my remaining red onion, I had in the fridge. I tossed those two together with a quirt of lemon, sea salt, and fresh cilantro. The only creamy substance, I owned in the kitchen, was vegan mayo. I combined that with some cracked green and white peppercorns, and some chipotle sauce I have in fathoms of my kitchen. I know; mayo in a taco?! Might sound gross and unauthentic, but trust me, it's delicious! My husband puts mayo on virtually anything. And I have learned to deal with mayo...must be a European thing!
Now, I could have made these tacos a little more elaborate. With maybe a home made salsa and guac. But, in all honestly this was "I'm cleaning my fridge" kind of dish. (Hence the cucumber and red onion slaw.)
